Cilantro Turkey Burgers with Cilantro Lime Sauce

for the burger

*1 clove garlic, minced
*1 large handful cilantro, diced
*1 teaspoon jalapeño peppers from jar, diced
*couple dashes onion powder
*1 tablespoon finely shredded coconut
*ground turkey meat (enough for 2 burgers)
*ground pepper & sea salt to taste

mix ingredients. 
melt coconut oil in skillet on stove top OR fire up your grill (either indoor or outdoor).
make your burger.

for the sauce

*juice from half a lime
*big handful cilantro, finely chopped
*1 teaspoon coconut aminos 
*1 tablespoon olive oil

mix in a blender/ food processor/ whatever

serve sauce over burger when done.

if doing whole30 or paleo - on nothing or do a lettuce wrap (yum!)

Soft, Medium & Hard Boiled Eggs

i came across this fantastic post on soft, medium & hardboiled eggs on the food network's site.
hard boiled eggs have been a go to for me.
such a quick and easy protein.
and they can be paired with so many other foods or put into a salad.

Curry Sugar Snap Peas

1 tablespoon coconut oil
1 teaspoon (or more to taste) curry powder
splash coconut milk (compliant if whole30)
big handful frozen sugar snap peas

*heat oil in skillet
*add sugar snap peas
*cook till thawed/ warmed
*mix in curry powder and coconut milk
*cook a few more minutes
*serve

tip: excellent with scrambled eggs as part of a (whole30 & even beyond) breakfast

Superbowl Chili (Whole30 friendly)

this recipe is inspired by my momma's chili and "the clothes make the girl"'s chocolate chili and "health-bent"'s pumpkin chili.

2 tablespoons coconut oil
2 onions, diced
4 cloves garlic, minced
1 cup diced green pepper
1 tablespoon jarred jalapeño peppers, diced
2 pounds ground turkey (you could totals use beef or whatever in this)
2 cups pumpkin puree
1/4 cup chicken stock/ broth
1 28 oz can tomato sauce (NOT pasta sauce!)
3 tablespoons tomato paste
4 dried bay leaves
6 tablespoons chili powder
1 tablespoon cumin
1 teaspoon oregano
salt
pepper

*melt oil
*add onion, garlic, green peppers & jalapeño peppers to oil
*saute
*add add ground turkey and brown
*add the remaining ingredients
*let simmer at least one hour

serve over cauliflower rice if on whole30.
serve with corn chips, cheese & cornbread if not.


Cauliflower "Rice"

This recipe is derived from Nom Nom Paleo's, which is posted here.

1 - head of cauliflower, chopped coarsely
1 - onion, chopped coarsely
2 tablespoons melted butter (or ghee, if whole30)
2 tablespoons olive oil
salt & pepper to taste

*throw the onion and cauliflower into a food processor & pulse into the use of rice.
*throw all ingredients into a skillet (make sure you use a BIG skillet if you have a good size head of cauliflower!)
*mix together
*cook 5 minutes without cover stirring and mixing your fats & veggies
*put cover on and cook 5 minutes
*stir and return cover
*cook additional 5 minutes

you can add this rice to a dish or use for fried rice (use coconut aminos in place of soy sauce if doing whole30) or season with lime & cilantro for example to make it a side dish.
it makes a lot, so you will have a lot to use for different meals.

also, i really do NOT like cauliflower, BUT i DO like this as an addition to other things.
soooo cauliflower dislikers - give it a try.
took me till day 28 to go for it. :)
